Herring Ceviche (small bites--serves 2)


I think my Dutch father-in-law would enjoy this appetizer.  He loves fish especially herring.  We often share a container of herring or sardines when we get together.  In the Netherlands you can find fresh herring in markets where they just clean them in front of you and hand it over to you to swallow the whole fish!  I was a bit shocked but amazed when I first saw this.  However, after eating it this way I was hooked.  I can thank my Dutch uncle, Jan Willem and aunt, Marja  for introducing my husband and me to these tasty treats!  This is my version of eating herring almost raw!  I had to admit, this preparation is pretty tasty.  I made the same dish 3 times in one day and I never make anything even twice in one month!  I hope you enjoy this dish as much as my husband and me.

Ingredients:

6 oz herring fillets, rubbed with salt and then vinegar, rinsed well with water, drained, cut into 1-inch pieces
2 T chopped white onion
2 t chopped Chinese chives or scallions
1 T fresh lime juice
1/4 t soy sauce
1/4 t mirin (Japanese rice wine)
1/4 t salt
1/4 t black pepper
1/2 t sugar
1 hot chili pepper, snipped thinly with scissors (optional)
2 hot chili peppers, garnish (optional)

Method:

1) In a medium size bowl, stir together the chives, lime juice, soy sauce, mirin, salt, black pepper, chili pepper, and sugar until well blended.
2) Add the herring pieces and onion to the bowl and mix until all the fish is coated with the juice mixture.
3) Serve the portion into 2 small plates and garnish with a chili pepper.
