Herring Ceviche (small bites--serves 2)
6 oz herring fillets, rubbed with salt and then vinegar, rinsed well with water, drained, cut into 1-inch pieces
2 Tbsp chopped white onion
2 tsp chopped Chinese chives or scallions
1 Tbsp fresh lime juice
1/4 tsp soy sauce
1/4 tsp mirin (Japanese rice wine)
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp sugar
1 hot chili pepper, snipped thinly with scissors (optional)
2 hot chili peppers, garnish (optional)
1) In a medium size bowl, stir together the chives, lime juice, soy sauce, mirin, salt, black pepper, chili pepper, and sugar until well blended.
2) Add the herring pieces and onion to the bowl and mix until all the fish is coated with the juice mixture.
3) Serve the portion into 2 small plates and garnish with a chili pepper.
