Herring Hearts and Eggs in Truffle Oil (small bites--serves barely 1 person)
This is a simple and delicious delicacy. The eggs are easy to find but the hearts are small (about 0.5 cm) and you will need many fish for just this one dish! However, they are worth harvesting. The hearts are full of flavors. The herring heart is found close to the head. I have eaten lots of fish eggs in my life but never fish hearts. I hope you will give them a try!!
2 Tbsps white truffle oil
20 herring hearts (or as many as you can harvest!)
Eggs from one herring
1/4 tsp chopped Chinese chives
A small pinch of salt and black pepper
3 young lettuce leaves, garnish
Hot chili pepper (optional)
1) Heat oil in a small pan over medium heat.
2) Add eggs, hearts, salt and pepper, cook for about 1-2 minutes on each side.
3) Serve on a bed of lettuce and add chili pepper.
