Mackerel Ceviche (small bites--serves 2)


The fishing industry is getting to be one tough business.  It is not an easy task and it can be a dangerous job for these fishermen to go out to sea and catch us fresh seafood daily.  F/V (fishing vessel) Rimrack is a family owned fishing business located in beautiful Rye Harbor, NH.  They have passion and take pride in harvesting the best and freshest seafood to sell directly to you.  I know because I received these fish from them and you really cannot get them more fresh than these.  One minute these fish were swimming and the next they are sitting in this dish shell!  Thank you Rimrack for the amazingly fresh and tasty fish!!

Ingredients:

6 oz mackerel fillets, rubbed with salt and then vinegar, rinsed well with water, drained, cut into 1-inch pieces
2 Tbsps chopped white onion
1 Tbsp fresh lime juice
1/4 tsp soy sauce
1/4 tsp mirin (Japanese rice wine)
1/4 tsp salt
1/4 tsp black pepper (optional)
1/2 tsp sugar
2 green shiso leaves, chiffonade
4 green whole shiso leaves, garnish (optional)

Method:

1) In a medium size bowl, mix lime juice, soy sauce, mirin, salt, pepper, and sugar until well blended.
2) Add the mackerel pieces, onions, and chiffonade shiso leaves to the bowl and stir until all the fish is coated with the juice mixture.
3) Serve the portion into 2 small plates and garnish each dish with 2 whole shiso leaves.
