Stir-Fried Cucumbers & Ground Pork (serves 4)

My father often stir-fried cucumbers in the summer when my parents garden yields an abundance of  cucumbers.  The natural sweet juice that comes out of them make this dish so refreshing to eat!  The next time you have cucumbers and not sure what to do, make this.  You may substitute other types of meat or seafood, or just keep it vegetarian.  Either way it will be tasty and you will be making it again and again!

Stir-Fried Cucumbers & Ground Pork (serves 4) 


5 large cucumbers (almost 3 lbs), peeled, seeded and sliced in 1/4-inch thick
1/2 lb of lean ground pork
2 large garlic cloves, minced
1 scallion bunch, chopped or cut into 1-inch lengths (optional)
2 Tbsp canola oil
2 tsp chicken broth base powder
1/8 tsp of salt


1) Heat oil in a large pan or wok over high heat.
2) Add garlic and stir for 30 seconds.
3) Add ground pork and cook for 2 minutes.
4) Add cucumbers and cook for 8-10 minutes or until they are cooked but not mushy.
5) Add chicken powder, salt and scallions and cook for 1 minute.
6) Serve with rice.

*My husband and I were on our way home after visiting my parents and we stopped in Belfast along Route 1. Outside a store there was a large box full of beautiful fresh cucumbers with a sign that said "free". We spoke to the man in the store and he said each day there is something different in the box. The staff has gardens and they always have extra vegetables that they generously like to share.  He wanted us to return the next day so we can get something different but we live too far. Belfast is a quaint town situated on Maine's large coastline.  If you ever have a chance you should visit and check this place out.  It also has lots of beautiful and creative arts from the talented locals, which can even be seen on the streets!
