Our family friends, Cô Vân and her husband have a very productive garden in their huge yard in Maine. They gave us some gourd tips to try--these are tender and have a wonderful taste. I simply stir-fried them with garlic and they are delicious! Thank you Cô Vân and Uncle Roger!
Stir-Fried Gourd Tips in Garlic (serves 1-2)
Ingredients:
1 Tbsp canola oil
1 bunch of gourd tips, peeled off the outer tough parts and wash well
2 large garlic cloves, minced
2 tsp fish sauce
Method:
1) Heat oil in a large pan over medium high heat.
2) Add garlic and sauté for 1 minute without burning.
3) Add gourd tips and stir occasionally for 5-6 minutes or until leaves are wilted and the stalks are tender.
4) Add fish sauce and cook for 1 more minute.
5) Serve with rice.
