Aloha Salad (serves 2)



After I got a taste of the crunchy and delicious malabar chestnut sprouts I knew I had to add them on this salad.  A sprinkle of the chopped roasted kukui nuts made it taste even more special!

Ingredients:

1 C packed shredded banana blossom, squeezed out excess water (please see How to Prepare a Banana Blossom post)
1 C packed shredded green papaya, squeezed out excess water
1/2 C of shredded huli huli chicken
6-8 malabar chestnut sprouts, chopped
1/2 t of chopped roasted kukui nuts (please see How to Roast Kukui Nuts post)
Kaffir Lime Sauce to taste

Method:

Arrange banana blossom, papaya, chicken and sprouts in a dish.  Sprinkle chopped kukui nuts and drizzle kaffir lime sauce to your taste right before eating.

*You can substitute huli huli chicken for any roasted, steamed or boiled chicken.  If you do not eat meat then you can leave the chicken out. You can substitute meat with steamed or lightly fried fish or other seafood such as shrimp.
