Maui Avocado Snack (serves 1)

On Maui the avocado trees grow taller than 60 feet and can be very productive when in season. There are so many fruit they are literally dropping on the ground!  If you are lucky you have friends who have a tree or part of a tree on their yard and they will give you some. Our friend Curt gave us beautiful huge avocados that lasted the whole Maui trip. Mahalo, Curt!!

Maui Avocado Snack (serves 1)


1 large ripe avocado, diced
Coarsely crushed Roasted Peanuts
2 Tbsp coconut milk
2 pinches of raw sugar (or to taste)
1 bougainvillea bract, garnish
1 banana leaf design, garnish
Banana leaves, serving plate


1) Fill the plate with avocado.
2) Drizzle coconut milk, sprinkle peanuts and sugar on top.

*This can be eaten as a breakfast or snack.  I love the creamy texture of the avocado so I eat it all day long.  You can add more sugar and make it a dessert.  If you prefer not to use peanuts you can sprinkle toasted sesame seeds, crushed macadamia nuts, pine nuts, sesame seeds, sunflower seeds, or another type of nut.
