Huli huli roasted chicken is popular in Hawaii. On some islands you can purchase them from a roadside food truck. I bought my chicken in a grocery store. If you do not have huli huli chicken you can use rotisserie chicken or any roasted chicken or turkey. In about a month if you celebrate Thanksgiving and have left over turkey you can make this salad!
Papaya-Huli Huli Chicken-Hibiscus Flower Salad with Kaffir Lime Sauce (serves 2)
Ingredients:
3 C shredded papaya
3/4 C shredded huli huli roasted chicken
6-8 Thai or sweet basil leaves, chiffonade
4 red hibiscus flowers, torn in half
2 Tbsp coarsely crushed roasted peanuts
1 paper umbrella, garnish
Banana leaves, serving plate
Kaffir lime sauce
Method:
1) Arrange the papaya and chicken on a platter or dish
2) Garnish with basil leaves, hibiscus flowers, and peanuts
3) When ready to eat scoop out a portion onto a plate and drizzle with lime sauce to taste
