Tropical Breeze Smoothie (serves 2)


This is a welcome drink that I made after our flight to Maui.  When you drink blended fruit or vegetables you are not wasting any edible part of it.  It's quick and easy to make and consume.  You can pretty much blend anything.  If you can think it then you can make it, so whip out that handy blender!

Ingredients:

2 C of Avocado and Lilikoi Blend (recipe follows)
6 ice cubes
1 1/2 C of coconut water
1 T sugar
Avocado wedges, bougainvillea flowers and paper umbrellas (garnish)

Method:

Blend all ingredients well in a blender.


Avocado and Lilikoi Blend (makes about 2 1/2 Cups)

Ingredients:

1 avocado fruit, remove skin and seed
2 lilikoi fruits, scoop out the inside
1 C milk
1 t sugar

Method:

Blend all ingredients well in a blender.

*On Maui avocado and lilikoi, which is a Hawaiian term for passion fruit are easily cultivated.  All they need is some sun and water with or without love.  I kid you not!  The avocado tree can easily grow to 60 feet tall.  The lilikoi is a vine and once you have one vine growing the matured fruit will produce many more young vines.  These two plants will produce a huge crop and you will soon be trying to figure out what do with all the fruit!
