I made this quick shrimp appetizer to serve on toasted bread. My neighbor and friend, Inge came over with some roasted seaweed snacks for me to try. I decided to use the sheets to wrap the shrimp. It turned out to be surprisingly tasty!
5-Minute Sautéed Garlicy Shrimp (serves 2)
Ingredients:
1 lb peeled fresh New Hampshire wild shrimp, washed and shells removed
1 Tbsp olive oil
2 Tbsps unsalted butter
1 whole garlic head, smashed, peeled and chopped
1/2 large shallot, thinly sliced or finely diced
2 tsps dried red pepper flakes
1 bay leaf
1 tsp sea salt
pinch of black or white pepper
1/2 t lemon juice
Method:
1) Heat oil and butter in a medium size pan over high heat.
2) Add garlic, shallot, red pepper flakes, and bay leaf. Sauté for about 1 minute.
3) Add shrimp, sauté for about 3 minutes.
4) Stir in lemon juice, salt to taste, black or white pepper and cook for 1 more minute.
5) Serve immediately.
